  • How can you make keto baked goods?

    Keto cakes and products can be made using-
    a. Healthy flours like nut flours, banana flour, almond flour.
    b. Nuts in any shape or form, like nut milk, nut flours, whole nuts.
    c. Fats like vegan butter, plant based oils.
    d. Alternative sweeteners like stevia, erythritol, Monk fruit.

  • Is Baking soda and Baking powder Keto friendly carbs?

    Baking soda does not contain any carbs and therefore, is keto friendly and can be considered a diet cake. However, Baking powder does contain carbs, since it often contains cornstarch. Baking powder only contains 1.3 grams of carbs per teaspoon, so it is keto friendly as long as used in minimum quantity.

  • What fats do you use in vegan cakes?

    Any vegetable oil or nut oil can be used for vegan cakes, provided it should be flavourless or low flavoured, so that it does not change the taste of the final product. Vegan Butter, which is a non dairy substitute made by combining water with a plant- derived oil, such as olive, avocado, coconut, or a combination of oils also can be used as a fat in vegan cakes.   • What type of sugar free sweeteners are best on a ketogenic diet?

    Stevia, erythritol, Monk fruit and Allulose are great keto- friendly options to use in place of the conventional sweeteners. You can learn more about this in detail through our Baking classes.

  • Can diabetics use jaggery as a substitute?

    Jaggery is a nutrient-rich sweetener but this sweet-alternate also contains about 65 to 85 percent of sucrose, which when absorbed by the body raises blood sugar levels. That means it is as harmful as any other form of sugar. The only difference is jaggery takes time to get absorbed in the body. Jaggery's glycemic index is very high and hence, it is not advisable for diabetics to consume jaggery. While baking healthy diet cakes, you must keep this in mind.

  • How can you substitute Regular flour to coconut/almond flour in any recipe?

    Unfortunately, regular wheat flour is very different in texture from almond flour and coconut flour and they do not even contain gluten. But, for every 100 grams of wheat flour, you can use 50 grams of coconut flour and increase one egg in the recipe, if it is a recipe with egg, or increase 35 grams of curd if it is an eggless recipe. When baking with almond flour, replace the same volume of flour in the recipe with the same volume of almond flour, but do reduce 25% of the fat content in the recipe.

  • Can you substitute coconut flour for almond flour?

    Yes you can substitute coconut flour for almond flour. For every cup of almond flour you can substitute half a cup of coconut flour.

  • Is sugar free always good?

    No. The human body reacts to artificial sweeteners differently than it does to sugar. For example, Fructose is widespread used in “sugar free” products but according to new scientific findings fructose has an even more harmful effect than household sugar, as it boosts insulin resistance and the development of a non-alcoholic fatty liver (NAFLD). Sweets, any kind of sweets, create the desire for more. Therefore, using sugar free products once in a while is fine while baking and can help you healthfully indulge.

  • What is erythritol?

    Erythritol is a sugar alcohol which is praised for its sweetness while having little to no calories. Erythritol may suppress the growth of bacteria in the mouth. Also, unlike sugar, it doesn’t feed the bacteria that cause cavities. Erythritol is very safe to use but still may cause some digestive upset if consumed in large quantities (as with any sugar alcohol).

  • What constitutes a healthy cake?

    A healthy cake constitutes of bare minimum processed ingredients. Non processed flours, fats, sugars, milk and free- range eggs would give you a healthier and tastier cake.     A homemade banana cake can be stored for upto 4 days. Do not store it in the refrigerator as the fridge circulates cool air that can remove the moisture from the cake and make it dry.   • Why does my vegan cake fall apart and crumble?

    A cake can crumble usually when the batter is too thin. The lack of leavening power or excess sugar can end up robbing water from gluten in the flour in a vegan chocolate cake. This can be prevented by mixing the ingredients in gently or folding them in and also by adding a leavening agent. Also make sure the batter isn’t too thin so that the cake is baked properly.
