Ingredients for Chocolate Cake:

  • 2 cups flour
  • 2 cups sugar
  • 1 ½ tsp vanilla extract
  • ¾ cups natural unsweetened cocoa powder or Hershey’s special dark cocoa powder
  • 1 cup vegetable oil
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup boiling water
  • 1 cup buttermilk

Ingredients for Oreo Icing

  • 1 ½ cups of butter
  • 1 ½ cups of shortening
  • 8-9 cups powdered sugar
  • 3 cups oreo crumbs
  • 1 tsp vanilla extract
  • 6-7 tsp water

Ingredients for Chocolate Ganache

  • 6 oz semi-sweet chocolate chips
  • ½ cup heavy whipping cream
  • Oreos (optional)

Now let’s start baking this delicious cake. Start with preparing the cake pans. Take three 8 inch pans and cover the base and the sides with parchment paper. Grease the pan with butter. This will avoid the cake from being stuck to the pan while baking. Now take a large bowl and add all the dry ingredients to it. Whisk all the ingredients thoroughly. Now add the eggs, buttermilk and vegetable oil to the dry ingredients and mix them properly. Take boiling water and add vanilla extract to it. Now add this mixture in the bowl and mix all the ingredients properly. Divide the cake batter into three pans and bake them at 300 degrees Celsius for about 30 to 33 minutes. Check the cake with a toothpick to test whether it’s done or not. After the cake is done remove it from the oven and allow it to cool on the cooling rack for about 10 minutes.

Making the Icing

While the cake is cooling, prepare the icing for the cake. In a bowl add butter and shortening and beat them until they become a thin smooth paste. Now add vanilla extract and the oreo biscuit crumbs. Mix them together smoothly. Now add 4-5 cups of powdered sugar and stir them consistently until everything is mixed smoothly. You can also add milk or water to get the desired consistency. Set aside 3 ½ cups of icing aside and add chopped oreo pieces to the remaining icing mixture.

Take the cooled cakes and remove the cake domes from the top with a knife. Place the first layer of the cake on a cake plate and evenly spread the icing with chopped oreos over it. Place the second layer of the cake over the first and repeat the same process. Now place the third layer on the top and frost the cake completely with the remaining icing with chopped oreo biscuits.

Making the Ganache

Now set the cake aside and make preparation for chocolate ganache. Take a medium sized bowl and add chocolate chips into it. Take another bowl and add heavy whipped cream to it and heat the bowl on a medium flame. Add chocolate chips to the whipped cream and mix them together for 2 to 3 minutes. Drizzle the chocolate ganache on the edges of the cake and then pour the remaining chocolate ganache on the top of it. Now sprinkle some oreo crumbs over the cake and your cake is ready.

4.Cake Flour or Refined Flour

Refined flour which is also known as cake flour is a refined version of all purpose flour which is perfect for baking cakes. The soft and tender texture of this flour blends perfectly with other ingredients. However, there are certain cakes for which cake flour is not good like, spice cake, carrot cake, banana cake and more. These cakes contain additional wet ingredients; therefore cake flour is not ideal for such cakes.

5.Don’t Open the Oven

Try not to open the oven many times while baking. This way cool air gets inside and the cake doesn’t rise and become fluffy. Set your oven at a required temperature and set the timer accordingly and get away from the oven until the cake is baked. The result will be delicious and you’ll finally have a perfect cake. If you are using a convection oven, then reduce the temperature by 25 degrees Fahrenheit.

6.Bounce-Back Test

This test helps us to know if the cake is cooked properly or not. Press your finger on the cake gently and then remove it. If it bounces back to its normal position then it is done perfectly, else you need to bake it more.  There is another way to test too. Stick a toothpick in the cake and pull it out. If it comes out clean then the cake is done.

7.Allow the Cake to Cool in the Pan

This may sound like the easiest tip but we are all in a hurry once the cake is baked. Decorating the cake before it has cooled down can lead to a disaster and also the frosting will melt on a hot cake. Leave the pan and let the cake cool inside it before taking it out or decorating.

8.Storing the Cake

Cake tastes best at room temperature. You can cool the cake completely and store it in an air-tight container at room temperature. If the quantity is more, then you can also store it in a refrigerator.

9.Grease the Pan Evenly

You won’t like it if after hours of hard work you find your cake sticking to the pan and not coming out. All the effort that you put in baking the perfect cake remains stuck in the pan. Therefore, it is advisable that you grease your pan evenly with butter before putting in the cake batter. You can use a sprinkling bottle to spray the butter in the pan or spread melted butter with your hands. You can also use vegetable shortening to get this done. Most of the bakers prefer to use vegetable shortening rather than using butter as it gives a better output. The reason behind this being that water can cause the cake to stick to the lining of the pan and butter contains more water as compared to vegetable shortening. Also, vegetable shortening doesn’t add any extra flavour or taste to the cake.

10.Consider Using Parchment Paper

Parchment papers are the best thing to use to keep your cakes from sticking to the pans. These papers do an excellent job of keeping the cake from sticking to the pan and they are also very inexpensive. Using parchment paper is no rocket science, all you need is to trace the lining of the baking pan on the parchment sheet and cut out the perfect shape. Like most people you can also use a permanent marker to trace the shape of the baking pan or you can simply use a pencil and cut out the shape using a pair of kitchen scissors. 11.Sprinkle Some Flour as Well

For amazing results you can go ahead and sprinkle some flour on the bottom of your baking pan. A small amount of flour can be sprinkled directly over the butter or vegetable shortening.
