- Preheat the oven to 170°C and line the bottom and the sides of a 9-inch pan with parchment paper. Keep it aside.

- Preheat the oven to 170°C and line a cupcake pan. This recipe will work for regular sizes as well as mini muffins.
- Mix together oil, butter, buttermilk, vanilla, eggs and vinegar in a mixer fitted with a paddle attachment.
- In another bowl, sift together flour, baking soda, cocoa powder and salt.
- Keep the mixer on low speed and gradually add dry ingredients to the wet ingredients. Mix until it turns smooth and no lumps are visible but be careful not to over mix the batter.
- Add food colouring and stir to combine. Due to the addition of cocoa powder, the cupcakes will be a dusty red colour. Omit the cocoa powder if you want light or bright red cupcakes.
- Fill the cupcake liner till it is about ⅔ full. For mini muffins, bake for about 10 minutes while turning cupcakes halfway through the baking process. For regular size muffins, bake for another 10 minutes while turning halfway through.
- Check if the cupcake is ready by inserting a toothpick into it. According to online cake baking classes, if the toothpick comes out clean, the cupcake is ready for use.
