The whole cake is divided into three parts- cake, icing and the topping. You need to prepare all your ingredients separately for each one of them.
Ingredients for the Cake
- 1 ½ cups all-purpose flour: You can substitute the all-purpose flour for whole wheat or white whole wheat flour. If you want to make gluten-free bread, you can swap the all-purpose flour for gluten free flour blend.
- 2 teaspoon baking powder: It helps the cake to rise and become fluffy and spongy.
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1/3 cup of coconut oil: Make sure the oil is at room temperature. It helps make the cake soft and moist. (You can choose the oil of your choice if you don’t like coconut oil)
- 1/3 cup natural unsweetened peanut butter
- 1 cup brown sugar
- 2 large eggs
- 1 cup buttermilk (You can replace buttermilk with 1 cup milk with one tablespoon of vinegar or lemon juice stirred in it. Let it sit for 5-10 minutes before using it in the recipe)
- 1 teaspoon vanilla extract
Ingredients for Icing
- 1 cup natural unsweetened peanut butter (If you have the normal peanut butter then cut back a little brown sugar)
- ½ cup unsalted butter
- 3 cups powdered sugar
- ½ cup heavy cream
Ingredients for Topping
- Roasted peanuts
Now it’s the time to bake the cake. Take a big bowl and sift the flour in it. Add baking powder, baking soda and salt in it. Mix them together and keep it aside. Take another mixing bowl and add the peanut butter, oil and brown sugar. Whisk the mixture thoroughly until the result is combined and creamy. Then add the eggs and vanilla extract and beat it nicely to get a smooth creamy texture. Now add the flour and buttermilk in the wet mixture and mix them together until combined properly. Make sure you don’t over mix else the cake will become dense and dry.
Now take a baking pan and grease it nicely with the butter. Pour the batter in the pan and spread it evenly. Bake the mixture for 30 minutes in a preheated oven at 350 degrees F. Check the cake with a toothpick. If it comes out clean then the cake is done, else you need to bake it for a few more minutes. Let the cake sit in the pan for a few minutes and then invert it on a wire rack to let it cool completely.

After the cake has come at room temperature, cut it into two parts horizontally. Spread a thin layer of the icing on the lower half and place the other part over it. Now put a nice thick layer on the top and cover the cake with the icing prepared. Now take some roasted peanuts and break them into small parts and decorate the cake with it.
